I discovered something of myself. . . I have no idea how to cook fish.
That is a sad thing considering I live within spitting distance of some of the best fish markets in the country.
So what I need is some of your favorite fish recipes.
Please!!!!
And gods, chicken is getting old.

Gerry, What kind of fish are we talking here, fish filets (cod, halibut, haddock, salmon, etc.) or shellfish (shrimp, scallops, clams)? I cook lots of fish different ways, but depending on what you enjoy, I can give you recipes. Generally, you cook fish at a high temperature for a very short time.

I am thinking more filet fish. I still haven't gotten over my extreme distaste for shellfish.
Salmon is big up here, halibut too.

Well, you could always just simply broil or grill the filet with lemon, butter and garlic. It's done when the fish is opaque and easily flakes with a fork. You could season it with Old Bay Seafood Seasoning or Mrs. Dash for extra flavor. Or you could even brush bottled pesto sauce on the fish before broiling to give it a basil flavor. If you're more adventurous, you could always make a stuffing and bake the fish. I have a good and easy recipe for crabmeat stuffed fish (if you like crabmeat).
